Just this one time… screw COVID… we needed a get together!

Last friday we had my eldest son and family over for dinner. It’s been months since we’ve seen them and I had yet to see the newest member of the family, Kimber (born July 1st), so it was an amazing night!

I cooked (of course) and made a couple of pans of my world famous chicken enchiladas with refried beans and rice for dinner and scratch made chocolate cupcakes with scratch chocolate frosting for desert. They were very well received (as they should be… those enchiladas are to die for!!!) The recipe is linked. Make them… you’ll be happy you did!

We did make plans to start having the grandkids over, one at a time, on Friday nights/Saturday mornings. My eldest grandson, Jasper (age 10), is currently first in line. Apparently, he’s never seen any of the Matrix films, so that’s what we’re gonna do. Should be fun!

Other than that, my life is still mostly playing games with my grandsons, my psudo-son Myke (aka: The Gooch), his brother, Josh (aka: zzottt), and occasionally my own sons (they’re busy so that’s rare). Currently, lots of GTA5 and Destiny 2 with the occasional round of Stick Fight: The Game (a special kind of stupid, but highly entertaining!!).

That’s about all I have for now. Again… try the enchiladas and use white corn tortillas… they’re awesome!!!
